The Dubai chocolate bar, and why most versions disappoint

The Dubai chocolate bar went from a viral video to a permanent fixture. Here is what is actually inside one, and what we did with it.

What it is

The bar that started the whole thing is milk chocolate filled with pistachio cream and kadayif — shredded filo pastry, toasted in butter until it snaps. That crunch is the entire point. Without it you have a pistachio bar, which already existed and did not need a hashtag.

Why most versions disappoint

The difficulty is not the recipe. It is that kadayif goes soft the moment it meets moisture. A bar assembled on Monday and sold on Friday has lost the only thing that made it worth queuing for.

The second problem is the pistachio. Real pistachio paste is expensive and dull green-brown. The bright green filling you see in a lot of versions is telling you something about itself.

What we make

We make Dubai chocolate bars in our own Miami facility, alongside our gelato. Producing in-house is what lets us toast the kadayif and assemble close to when it is actually sold, which is the only way the texture survives.
